Pyrenees - Coast to Coast

I'm planning a trip next year to the Pyrenees and I would like to do a coast to coast trip. I don't want to take on the 100 hour Raid challenge but I would rather be a bit more leisurely and take 6 to 7 days and appreciate the surroundings. I would also consider a supported tour along the lines of the Pyractif Coast to Coast to make life even easier.(http://www.pyractif.com/packages/c2citinerary.html).
So...any advice on the following:
1. Can anyone recommend Pyractif or any equivalent? I'm not fixated on any group - my reference to them is based on a fast surf.
2. My "good" bike is a Trek 1500 with a compact chainset. Would a triple be recommended?

I did the 5 day trip with them in 2005 on the same bike as you!
Found them good.
Would recommend a triple unless u are light or well used to the compact as the sheer lenght of the climbs does grind you down and a triple might just make teh experience that bit more enjoyable.
Its a great trip & well worth it
