  • Nope, but I can give you a good one for Cranberry vodka but you need to move fast as it needs 6 weeks to mature before openage :0)

    My old landlady used to replace any alcohol in the recipe with a 50:50 mix of apple and orange juice. She also soaked all the fruit in this mix for at least a day. She wouldn't "feed" the cake with this as it doesn't have the preserving powers of brandy, so the cake was iced soon after baking to stop it drying out any more. She also made little mini ones baked in half sized tin cans to give away as presents. Highly recommended!

    I think the rest of the recipe came from a Delia Smith book.

    That is an oxymoron, all good christmas cakes need to be fed alcohol.

  • I always make a steamed marmalade pudding and Drambuie custard instead of a traditional Christmas pudding. My family just prefer it.

    Roast fore rib of beef instead of turkey too.

    Yes, that does sound damn good. Beef over turkey any day as well.

    You need to be quick as it needs 6 weeks to work.
      Get a bottle of vodka and a load of cranberries. Crush the cranberries in a bowl until they start to juice. Get a large sterilized container. Add the vodka and cranberries into the container (fruit and all). Seal and leave in a cool dark place for 6 weeks. Make sure you have saved some of the cranberries, chuck them in a bag in the freezer. Keep turning and shaking the container to infuse the mixture. After 6 weeks open and filter the drink out making sure you don't get any of the fruit pieces in. Serve with some of the frozen cranberries (and maybe a cocktail umbrella).
