I've got the tools and I've got the campag service manual, but I just can't loosen the central hex bolt. Is there a technique for maximising leverage without pulling a muscle? Is it better have the bike in a workstand or on its wheels? Any help appreciated!

On it's wheels. One hand gripping cross bar keeping the bike upright and steady.Exert opposite forces i.e. pull up on crossbar press down on tool .
Convince yourself it will loosen and that you are the man for the job. :)

Firstly, get yourself a proper workshop-quality tool, a regular allen key probably is too short to get sufficient leverage - From drive side, crank at 3 o'clock and allen key at 9 o'clock and push firmly down on both ends. Dunno why someone suggested holding the frame tube as you need to stop the crank turning.
Make mine an Italian, with Campagnolo on the side..
