sizing a giant scr

Hello all,
I'm in the process of shopping for a Giant SCR 3, and I have a question about sizing. I realise this would be better hashed out actually sitting on a bike, but none of my LBS seem to have anything in stock for me to try out.
I guess the simple version of my question is, what is easier to tweak on a compact frame, reach to the bars, of bar height ?
Fortunately, I've got my old bike to use as reference. It's pretty comfy. (Ridgeback Cyclone with Midge Bars and a big 'ol steering tube extender on it.
From what I can see from the geometry charts for the SCR frame, I'm between a medium and large size. (I'm just over 5' 11'' tall). My concern is the drop from the saddle to the bars in relation to reach. My current bike is about 56 cm C-C from head tube to seat tube, and about 48 cm seat tube length. The measurement from the top of the saddle to the centre of the bottom bracket is 75 cm. The reach is comfortable, but to get the bars at a comfortable height relative to the saddle, I've got approximately 20mm extension on the steering tube. This is something I'd just as soon avoid with the new bike.
A large SCR frame has 58.5 cm effective top tube length, VS. the medium 56.5. But, it also has an extra 5.5 cm of seat tube length, 55.5 vs 50 cm.
Am I correct in thinking that the larger frame will have less difference in saddle height to bar height? Of course then the reach will be a touch on the long side.
If I use a shorter stem on the large frame, what will the effect on bike handling be?
Is there something I'm missing ?

Just a quick update.
I managed to find a LBS that did in fact have the bikes in stock, and was allowed a cursory sit on them, no adjustment of saddle height, but enough to confirm my suspicions.
On the medium, the bar height is about 4 cm too low, and on the large they are about 4cm too far forward.
So, my revised question is, which dimension is easier to correct for by changing the stem and / or handlebars ?
Any advice for a relative newbie?

Giant SCRs come with a reversible stem and a stack of spacers. If your LBS had the stem in its low position then by flipping it it'd raise the bars by about 2cm I should think.
Swapping a 110mm stem for a 70mm stem on the large will make the bike look odd.More problems but still living....0
