When to replace Rims?

I have a question regarding when should I replace the rims on my wife's mountain bike? They do not have a wear indicator but the rear rim is noticeably worn. Does anybody have a recommendation as to how thick the rim should be before replacement? Both me and my wife commute all year round. She does about 2500miles a year usually with either a trailer or a trailer bike and child seat (so she is pulling an extra 40kg). Therefore she tends to get through a couple of sets of break pads per year and a chain and maybe a cassette.

Chris Juden of the CTC recommends a proof test: inflate the tyres to well over the recommended pressure. Details here:
