Which of these Wheels?

Right, the title says it all; I have made a shortlist of wheels that i can afford from either Chain Reaction Cycles or Merlin. I cannot go much higher as i have to pay for lbs to remove and swap my old cassette onto my new wheel.
I would use it for XC and light DJ and DH.
Shimano XT Hub, Sun Mammoth rim and 2mm DT Swiss spokes - from CRC
Or
Shimano Deore hub, Mavic 721 rim and 2mm DT plain guage spokes - from Merlin
The only other option i could think of is eBay but quality is not garuanteed.
Any other suggestions are welcomed.

I got a set of Mavix XM719's with DT Comp spokes on an XT hub from Merlin and cant fault them - At nearly 16 stone and not being the most skillful on a MTB they've stood up to some abuse - Black run at Glen Tress, Race across the Corrieyairick pass (Downhill section was described as being like a river bed that had been attacked with a jackhammer) and they're still in one piece not sure about the rims you you describe but I can vouch for the above!
Cant remeber what it was for the wheels but with an XT cassette, rim tape, inner tubes and Panaracer Fire XC Pro's it was aound £200 all in0 -
i wouldnt sugest shimano hubs. none of them are sealed. u cn get decent sealed hubs for that pricepeter hardy0

They do sport seals, but not the 'cartridge' sealing that you are thinking of. The top end shimano hubs usually need bearing services/replacements less often than some cartridge bearings. Also given a certain axle size, loose bearings can take more load.
Build is key, and I would suggest double butted spokes over plain guage.0
