cyclo-cross-light tourer advice needed

Hi, this seemed the likiest place to post and search is v.eractic so...
Currently researching my next bike: a geared drop bar XC with eyelets and braze-ons for full-length mudguards and rear rack, prefer steel over Alu, wish to run 700C 25-32mm tyres.
like the look of Bianchi Volpe or Surly Cross-check. Does anyone know where l can get the pre-built up models? My LBS are dragging their feet. How do these stack up to Specialized Tri-cross or Planet X. Any other brands l'm overlooking?
Also, anyone run such a XC with the Ultegra red band internal hub?

Hey Tako,
I've had a Surly Cross-Check for about a year now.
The guys at Brixton cycles put it together for me and they seem pretty clued up on everything Surly at least.
I opted for a different build from the pre-built bikes advertised on Surleyville but the guys at Brixton said they could match the parts to whatever I wanted.
I have a Tubus Fly rack and run 700 x 28's with SKS chromoplastic mudguards with no problems.0
