this is gutsy
8 oz butter
8 oz brown sugar
4 eggs
juice of 1 orange
8 oz plain wholemeal flour
1tsp baking powder
8 oz grated carrots (weigh after grating)
4 oz sultanas
3 oz chopped nuts
Cream butter & suger. Beat in eggs. Add OJ. Fold in flour, BP, carrots, sultanas & nuts.
Line an 8" tin - spoon the mixture in. Bake @ 180 degrees C for 1h15mins or until done.
If you want to, play about with the flour - I quite like about 1/3 strong whml flour with maybe some softer flour to balance it out - this gives a slightly tougher crumb.
If you want to ice it:
soften 3 oz butter, cream, sift in 8 oz icing sugar gradually. Add 2 tbsp milk and stir in a load of dessicated coconut. I sometimes put more milk in and leave the icing in the fridge overnight - the coconut plumps up a bit then.0 -
when I go on a ride I stop at a cakestop for a cake and a chat, who cares how they make it. If its OK I call again, if I don't like it I go somewhere else.
