Does anyone know if you can do something to get three days' riding onto one map?

The only way I can think of (presuming you have yet to do the ride) is to stop your gps and then start again the next day, rather than resetting in between and starting a whole new journey.
I have a Garmin Forerunner 201 and this would in effect mean one ride rather than three which would fix your problem. If you've already done the ride, I am plum out of ideas.0 -
Yup, I've done the ride. I didn't reset the thing between the days, but SportTracks still splits it into three. TC keeps them together, but their map is rubbish.
