Try one of the following:
on-one,
Condor,
Brixton cycles,
Or if not in london (on-one are mostly online) then try LBS, should be able to build one for you.0 -

i got a hand-built harry rowland mavic cpx22 from brick lane bikes for œ90.
It's amazing. he also builds them up using velocity rims.

You could also try one of the single speed converter kits with wheels you already have - basically a couple of spacers and a single Shimano DX (BMX) sprocket, which slides on to a normal freehub in place of a cassette. The spacers line the cog up with either the big or middle ring position depending on brand and the whole job takes about 2 minutes. This is one, from Gusset, but there are others on the market http://www.gussetbikes.com/gusset/viewprod_mtb.php?i=23 price œ17.99
If you have a spare wheel for a screw on freewheel, you can use a single BMX freewheel, but will probably need to play around with the axle spacers and the wheel dish to get it all to line up.0
