Should have added that the Conduct SL master cylinder replaces the stem face plate (31.8mm) and requires a 4-bolt hole pattern that is 40mm high and 22mm wide. This bolt pattern is used on Giant Contact stems.
The callipers are flat mount.

Just buy a cycle carrier that uses T-track fittings. Most makes should fit.

I had a 2011 Stumpjumper FSR Comp with 140mm travel that easily handled everything I tried - blue and red trail at Cwmcarn, Llandegla, FoD and BPW, as well as a few enduro events. Just buy a new rear wheel with free hub. It will be much easier than messing about replacing axles and redishing your existing wheel.

You can set the compression knob to whichever position best suits what you are doing - e.g. 'lock' for flat roads and smooth trails, fully open for lumpy, bumpy downhill stuff and anywhere inbetween for everything else.
With a bit of trial and error you'll soon work out what works best for you.

Reach is as important, if not more so, than seat tube length on modern mountain bikes.
Have a look at the Dartmoor Geo Chart and compare to your current bike or a bike that you know is the right size for you.

You can upgrade to any 1 1/8 to 1 1/2 tapered fork you want, but the question is ‘why?’.
What is your current fork not doing?

A Fox 36 fork starts at about £650 new. That’s a lot of money to spend on a bike that didn’t cost much more.

Out of the bikes you have listed I would go for the Bird Zero. They are cracking bikes and the guys at Bird are really helpful.
