Get a set of Clark’s m2 brakes for 35 Quid, work better than the shimano 785 calipers which are prone to leaking, they use the same pads as well.

Yes, I run 7000 front and rear mechs on rs505 shifters which are hyd 5800’s.

I’ve a set of spin fat boys, You can spec them for your weight, I’m 85kg no flex at all.

I use the flash evo to give a bit of clearance with 28mm rims, tried a few different ones, these tend to squeal a bit though

No flex at all, and I'm not a lightweight, would definitely recommend.
