Ditching the front mech

If I decide to ditch the front mech and keep only my 36t chain upfront, do you think a 11-34 rear cassette would give me an easy enough gear for the uphill?

Depends how heavy the bike is, how steep the hill is and what you're riding on. I wouldn't get away with a 36 up front and a 34 on the back round here.

i manage with a 42t up front and an 8 speed cassette at back, but my chain has a tendancy to come off

I use a 32t with a 12-26 if it is any use.
You'll need a chain guide.

You'll get fit trying to ride uphills with a 36t.
I struggle to get up some of the hills on rides I go on with a 22t granny ring.

will depend on the type of riding you do. I run 38/16 on my singlespeed mainly for training, just have to get out of the saddle on the climbs and go for it. Gets me fit mind.0
