After years of having a saddle bag i've changed to a pack in my back pocket and couldn't be happier.
I got a custom made pouch from www.beerbabe.co.uk - Judy custom made it exactly to my size requirements and even lined it with beautiful bike liner cloth.
Its made from recycled tubes and has a waterproof zip. I had it sized to fit exactly in my jersey/jacket middle pocket after deciding on the exact tools I would need.
I also requested that it unzips most of the way around so that you can access everything easily - I hated ramming everything in to a small zip opening and it was a disaster trying to find what you need with some saddle bags.
There were extra options like a pump holder on the side or extra pockets inside, but I kept it pretty simple. For just over £20 its the best investment in equipment i've made in years, and puts most premium priced bags and wallets to absolute shame.
Just another option to consider - I would highly recommend.

Best I’ve tried yet is the Arundel Dual. It fits snugly and securely with a strap round the seat rails and doesn’t have a Velcro strap round the seat post, thus avoiding abrasion marks on your fancy carbon. I carry two tubes, levers and small multi-tool in mine. Arundel do bigger, smaller and waterproof versions but the Dual is just right for my needs. £15 from Sigma.

I use a lezyne road caddy which has a tube, levers and multi-tool in it.
Small pump goes in my back pocket.0 -
I changed from saddle bags to using a tool bottle case 5 or so years ago.
I carry an inner tube, CO2 inflator, multi tool, tyre levers, tie wraps, small bike lock, patches (and a mask).
I buy them from PlanetX at either 99p or £1.99 and find they last at least a year before the zip starts to fail.

They can fly out of the cage on bumpy roads so I secure them with a length of elasticated cord.
One big advantage is that they don't get sprayed with water by the back wheel and like bsharp77's pack they open out fully for easy access.
Obviously you lose one bottle storage but I haven't needed two bottles in the UK.
I did revert to a saddle bag on my last trip to Mallorca (oooh when can I go again 😃)0 -

I just use a big saddle bag for a full day out, I don't see any advantage of having things in my back pocket if I'm not going to use them on the move. Jacket goes in there too.
Small saddle bag with tools, inner tube and pump for short rides.
Decathlon have a range of sizes which are all decent.0 -
I've got a couple of Topesk wedge ones - different sizes - not the most elegant but tough, do the job, easy to swop between bikes - I've had them years.[Castle Donington Ladies FC - going up in '22]0

I like the Lizardskins Cache/Super Cache bags. They are very neat and are pretty waterproof. The Cache takes an inner tube, multitool, tyre levers and patches, the Super Cache also takes a lightweight rain jacket. I often find the need for 2 water bottles especially in the summer so a tool bottle isn't an option, and I don't want to carry any more stuff in my pockets than I have to.0
