This is a factor but as a noob I don't know if the dearer one is higher spec etc, so therefore worth the extra bit of money.

I looked for a cyclocross bike recently and ended up with a cube cross race.
I got one with hydraulic discs, but mechanical discs and 105 comes in your budget: https://www.tweekscycles.com/uk/cube-cr ... s7EALw_wcB

Sorry I should of mentioned that it has to be from Evans due to cycle to work.
  • Go to Evans and ask to test ride both of them.

If it was up to me and the bike has to be a practical machine with disc brakes I'd get this:

Hydro disc brakes are FAR better than mechanical ones. I'd rather use rim brakes than mechanical disc brakes as they're a lot less fuss and don't have the weight penalty.
  • Avoid mechanical disc brakes. Even the best are mostly awful. Stretch to hydro discs if you possibly can.

Now I'm super confused as I'm new to all this so have no idea!

This is decent advice. If you want disc brakes then it is better to pay the extra and get hydros up front. The mechanical ones are fairly poor and if you get them you'll wish you'd paid that bit more. It's far more expensive to upgrade later on.

I've looked again on Evans, selected hydro brakes and seen this... Any good?

They're mechanical disc brakes. The only bike they sell for £1,000 or under with hydro disc brakes is the Pinnacle I linked to above.
