Does anyone know if the hg51 cassette can be used on a road bike?

And what is the difference between the hg50 and hg51?

    No idea what the difference is between them, but the spacing and freehub splines are the same, so they're completely cross compatible.

    Just beware of rear mech compatibility. Older road groupsets tend to have very short cages, for when a 19t was considered a granny gear.
