Fit advice (used competitive cyclist)

Okay, so as some of you are aware I'm about ready to pull the trigger on an R3. Being that I am tall, finding bikes to test ride has been difficult, I generally see myself in the 61cm family of bike frames if nothing else than to achieve a stack height that doesn't have me bent in half (even with spacers) (I'm 192.5cm tall). Over the last couple of days I did some measuring to see where I fit, turns out I'm long legged (48.2% of total height in my bike inseam) and have a +5cm reach. Now I'm concerned that the reach of the r3 puts it out of what will be comfortable for me. I'm importing the measurements I got from competitive cyclist below:

I also made a mock up of the r3 on a geometry builder. It has a top tube of around 600cm, but given how I would set it up the saddle nose to bar top is in the right range. As the fit calculator doesn't give any measurement for drop, i'm not sure how that would look, to me arm angle is what I should pay attention to here, but my arm angle has never really bothered me (not saying it couldn't be more comfortable) on my current bike and the r3 isn't a big departure from that size set up as I have it. Since the calculator doesn't give drop I'm wondering if that's going to throw the whole thing out of balance. According to the geometry builder I'd be riding with about 78mm of drop to the bar. I guess in my head if reach to bar and drop to bar are correct than I should be comfortable. If I can get there without making a mockery of the frame then it shouldn't considerably thwart proper handling, but as bike fit is a new concept for me (bought a used bike previously, rode it, loved it) I thought I'd see what thoughts are on here. Also the seller/fitter says that the frame will fit, but he didn't do thorough measurements, just inseam and watched me ride a similar sized bike on a trainer taking leg angle and watching form.

    To clarify, I guess my question is, which measurements should I pay attention to and how accurately do they translate to a frame. Should I use the saddle to bar measurement, if that's the case a 61 is perfect. Or should I use the effective top tube? If it's top tube I need to start looking at smaller bikes (which makes stack a nightmare as I can't take being bent in half).

    What bike have you been riding, what size is it and were you happy with the fit? It may be possible to work from there.

    It is difficult choosing the right size bike without sitting on it if you have unusual proportions and haven't ridden that much in the past so don't have a rough idea of what you prefer.

    Fwiw I'm just under 6'2, long torso and would ride a 58 R3. The 61 has a huge stack height at the front so you aren't going to have too much drop I wouldn't have thought even with long legs. The reach isn't huge for a bike that big - longer than I'd want but then you are 2 inches + taller so unless you have a very short torso sounds about right - I know that's not a guarantee though.

    What bike have you been riding, what size is it and were you happy with the fit? It may be possible to work from there.

    I rode a specialized secteur 61,frame stack of 643, frame reach of 398, it worked for me, no limiting pain after riding for 6 hours. With the opportunity to buy a new bike I want to make sure I get the proper size. I've been riding about 6 years, amped up the intensity this past summer and looking to upgrade.

    The Secteur has a relaxed geometry in comparison to the Cervelo R3 - the Cervelo will be longer and lower ( +7mm longer and -13mm lower for a 61).
    Have you considered the Cervelo C3? The Cervelo C3 has similar Stack and Reach data to the Secteur.
    You could also consider the Specialized Roubaix, Cannondale Synapse,Trek Domane, Canyon Endurace and the Giant Defy

    I have considered them, the synapse is very similar to the r3 in geometry. I want a more all around bike, strong frame for climbing. Looked at the endurace, but it's longer and lower than the r3. Part of why I like the r3. Also looked at trek emonda, it's about the same in reach as the secteur but lower. I tend to ride in the drops a lot, so figured I could go a little more aggressive. I'm mostly worried about reach as I'm just discovering that I have long legs/short torso. (Slightly longer arms). Also if I set up the r3 with the stem 40mm above the headtube and a 7deg stem, the difference between the bikes is down to around 3mm of reach and negligible difference in drop. I figure I could go to a 100mm stem also and get that reach dialed in. Maybe that's crazy and I should look elsewhere.
