Bikepacking Tuscany

Anyone got any tips for Tuscany?

Going to have 6 days bikepacking out there next month with my wife.

Rough itinerary is for 60-80km a day, mostly gravel. Something like
- Pisa - Volterra
- Volterra - San Gim - Siena
- Siena - Val d'Orcia - Montepucliano
- Montepucliano - Cortona
- Cortona - Gaiole
- Gaiole - Florence
- Florence > Pisa

Accom looks like a lot of agriturismos for €50-€70 a night, some AirBnbs for a bit less. Anywhere else to look for accom. How necessary is it do book agriturismos in advance?

How is the temperature in the middle of the day normally? As we're not really riding that far each day we should be able to avoid hot periods if needed.

*edit. Particularly keen to hear best way to plan routes. Komoot usually good in the UK for showing gravel/singletrack/path/road etc. Any other tips?
