Routes around Varenna/Lake Como

Heading to Como for a week with my better half on Saturday and thought I'd see if I could get any route recommendations. Staying in Varenna on the eastern shore of the lake.
Not strictly speaking a riding holiday (my girlfriend rides, but will hire a bike over there for one day max; I'm taking my bike) so looking to plan a few rides in the Como area that I can knock off in 3-4 hours with early morning starts - leaving the rest of the day free for non-riding. One day has been optioned for a trip to Bormio and the Stelvio (for both of us - my girlfriend is considering driving up to the pass).
On this list so far are:
- Ghisallo/Muro Di Surmano
- The loop from Varenna up through Esino Lario and on to Parlasco/Casargo/Pagnona/Treminico
- Passo San Marco (from Morbegno)
- Valica Di Valcava
Any thoughts on obvious stuff I've missed, or extras I could tack on to the above? TIA 8)
