Which Cyclocross Tyre for Winter Riding

I have a cyclocross bike (Ridley X-Fire Disc) which I use as a winter trainer. This autumn/winter I am thinking that I will probably end up on some simple dirt trails/rough paths as and when I fancy it.

I am not going to be going through the mud/mtb tracks or anything like that - rather just looking at unbroken paths/bridalways/canal paths alongside road riding on the same tyres. I am looking for a tyre recommendation which will be reasonable on the road but also allow me to go exploring from time to time when I fancy it.

Anyone got good experiences to share - would prefer to avoid any tyres which end up being very difficult to remove as cold fingers and struggling with a tyre after a puncture are not a good mix!!

thanks
