Will Fotheringham's Hinault Book
Highly recommended
It's called the Fall and Rise of French Cycling and there are a few interesting observations.
But the Hinault tales are great. I came to cycling towards the end of his career, and while I knew who won the Tours before Fignon, I didn't know much about how they played out (and that early Hinault wins were quite boring)
It's also astonishing how the TdF grew from the beginning of his career to the end.

Kelly says a similar thing in his book, about how there were 90-odd riders in his first Tour and 190-odd in his last.0
