saddles on new bikes

Always wondered why bike manufactures seem to spec high end saddles on bikes in the 2-4K range, surely contact points are a personal thing, I only ever use one type of saddle on all my bikes so even if I bought a bike that came with a high end branded saddle it would come off and be sold. Would it not be a better idea to spec them with a cheap no branded saddle which would lower the overall cost of the bike, they seem to do this with pedals.
