Locking up drivetrain

hi all im after some advice. I went out on the south downs today and the conditions were terrible in places, really thick mud and clay that sticks to the bike. The drive train got covered in mud which i tried clearing as best as possible. I have full shimano XT drive train with the chain correctly lubed. Occasionally the chain would suck into the chainrings and lock; only back pedalling would allow rotation again. Also the gears where jumping around a bit, i.e. i would be in a number 4 on the cassette and it would suddenly change up and then back down a few times The indexing seems pretty good though and has not done this before the muddy conditions. Are both these problems associated to the bad mud build up and is there anything/products that i could use to help reduce/prevent from occurring?

This also happened at mountain mayhem last year on a full SRAM X9 kit and was very frustrating. Any help would be greatly appreciated.
