Will there be a huge noticeable difference at all in terms of speed and ride feel?
Im replacing the original wheels on my 2007 allez as a lot of friends have mentioned id notice the difference. I can't find the official weight for the Alex rims da16's but the ultegras come in at a shade under 1600g which compared to most online wheel weights seems good. Will I notice a difference in terms of accelerating from a standing start and also average speeds?

Any advice gratefully received!

    Tyre make more difference.

But yes, you will notice improvement in all of those areas.

In my opinion id stay well clear from the ultegras. They flex alot and the nipples fail. Get some handbuilts for the same money, lighter and stronger. Ultegra hubs, mavic open pro rims and decent boots and your laughing

Mine are fine....and yes quicker to accelerate and bike should feel more nimble.
