Hiya
Would a SRAM apex 10 speed 11-32 cassette work on a 105 drivetrain?

Nope - the top jockey wheel on the rear mech will hit the big sprocket - biggest you can fit is a 28
Make mine an Italian, with Campagnolo on the side..
  • So I would need the SRAM rear mech as well ? hmm maybe better to get the complete apex drive chain then yea?

You could use a Shimano MTB rear mech.

The problem isn't the compatibility of the SRAM and Shimano just that a short reach rear mech can't cope with anything bigger than a 28 (some say 27 I believe) sprocket.

The SRAM mech will not work with the 105 shifters. If you want to use the Apex cassette you will need to use a Shimano MTB mech. Some come with medium cage options which would be fine and not look too bad.
