UST Rims. What tyres?

Have just bought a hardtail which I want to use as a commuter with the odd weekend bash.
I have a Full Susser to which I fitted Nobby Nics and run them with a ghetto tubeless set-up on DT Swiss rims.
The new hardtail has Mavic Crossmax UST rims with Panaracer Fire XC Pros.
The question is, can I fit any tyre I fancy e.g. Conti Twister Supersonics to these rims?
And would anyone like to recommend a mixed use tyre that will not let me down at the weekend doing all year round semi-aggressive XC riding?
Some suggestions on here have been Conti Traffics (840g!) and Schwalbe Smart Sams (817g!).
I really can't afford to build up another set of wheels.
Although I could only use the FS at the weekend...

I used Just Riding Along's wheel milk (liquid latex) on my FS.
