London to Brussels, seek advice on racks and panniers

I am planning to visit a friend in Brussels in May. As a bit of a joke I told him I would cycle there and now it's become a bet, so I have to do it. I have planned a route through the flanders from Dunquerke to Brussels, including a few cobbled murs and I will soon look at the London-Dover section as well.

My problem is that I don't really own a touring bike, only a racer with no holes on the frame to fix a rack. I have seen those pannier racks that only have one fixing point on the seat post, but they appear somewhat weak.
However, I don't need too much luggage, I plan to go in two, max three days and same on the way back (I can wash my stuff once in Brussels). Also, I plan to sleep in youth hostels, so no need for sleeping bag etc...

In your experience, what's the best solution to carry the luggage?
