Working out tyre widths

Hi,
I'm putting some road slicks on an old mountain bike that I have and was wondering what the safest minimum width would be.
I measured the internal width of the rim as 17.3mm. Having looked on Sheldon Browns site, I worked out that I could go as thin as 1 inch, but this is a lot narrower than I expected so I wanted to check with you guys first.
I thought that there was a calculation that you could use to work it out all scientific and that.
