Specialised CLP stem may be an option, it has 2 or 3 different shims to tweak the angle to how you like, so adjustable without being like one of those dumb truly adjustable stems.0

I'm having this issue too. Ritchey used to do a -17 stem in 1 1/4 but doesnt seem to exist anymore which is a shame.
Spesh stems without the shim are 1 1/2 so would need a thinner shim to take it down to 1 1/4 but cant see any.0 -
IIRC Canyon only do the Ritchey 4 Axis +/- 6 degree stem in 1.25 or perhaps their new Canyon stems.0
