Europe where to head in August?

The wife and I have 10 days in August to head on to the continent for a bit of a holiday in our VW T5 camper. Having only ever ridden a bike on these shores I am really keen to take my bike to do a bit of riding 
.
Living in Devon it would be easiest to get a ferry from Plymouth or Portsmouth but we could drive to Dover if it was cost / time effective. I have a few boxes I have to tick to keep the wife happy......
- There must be stuff for the Mrs to do while I go off for a ride each day (I'll only be riding for max 4 hours a day)
- We will have our 18 month old with us so it cant be too hot at night.
- That's about it!

The Pyrenees. Take the ferry to Santander or Bilbao, then head east.Got a place in the Pyrenees.
