Cassette Advice

It has come time for me to change chain and cassette. It has got me thinking what cassette do I want. I have at the moment is a 12t/26t 8 speed. Have been looking at the 13/23. I like to spin so the close ratio looks nice. It is quit flat around me might use the 26t once on a 50 mile ride. (O and it is a triple chain ring)
Could I take the 23t sprocket of the 13/23 cassette and put the 26t from my old cassette on in its place?
So could it change from 21t to a 26t and back the other way ? If that make sense
Or just rule no5

    Why not switch to the 13/23 and hang onto the 12/26 so you can put it back on if you're going for a hillier ride than usual

    With you having a triple, and "only" 8 speed, I would get as close a ratio cassette as you can get. So 12-23 or 13-23 or whatever is available.
    Red bikes are the fastest.

    Al_1 think I will do what you suggest. Have gone for the 13/23t and see how I get on.

    I had the 13-23 cassete on my bike just swapped it for a 12-23 as old one was worn out & im hoping 12 will give me slightly more speed on downhill.
