Rose Carbon Pro-RS 4400 - spec list & frame sizing

After spending hour upon hour trawling the internet, I've decided to go for the http://www.rosebikes.co.uk/product/detail/aid:605928 Rose Carbon Pro-RS 4400 that can be had for £1,584.12 plus shipping.
The standard spec comes up as;

There are options on the configurator to change the spec of some of the components. I was contemplating changing the wheels to Mavic Cosmic Elite 011. There's also an option to change out the seat post from the Rose carbon post to any of the following;
FSA Metropolis CT-270
FSA SL-K SBO
FSA SL0K SB20
Any good or bad experiences with any of these seatposts? Excuse my ignorance but what are the pros/cons of changing from 27.2mm to 31.6mm seatpost?
Finally on deciding which frame size to go for, after punching my measurements (85cm inseam; 176cm total height) into the Rose website it suggests a 56.1cm. Their frames come in either 55 or 57cm. Basically they are saying if you want racy go 55cm or if you want a bit more relaxed go 57cm. This is the bit that I'm starting to get lost on. If I was to opt for the 55cm version and find it a bit too aggresive can I compensate this by fitting shorter/longer stem & move saddle position? I know bike fitting is a massive area that I have only scratched the surface of but don't want to make the wrong move when I'm on the order screen (can't stretch to a bike fit as I'm already on borrowed time with my other half spending £1.6k on another bike) so will have to just get as much info as I can from those that know a lot more about the issue.
Any last minute advice would be greatly appreciated!

Did you order this bike in the end? If so, how is it? what option did you go for on the frame size? and lastly, did you stick with the DT Swiss wheels?
I'm thinking of ordering one of these in the next few weeks but I don't know much about the wheels. They have them as £350 on their website but so are Shimano RS 80's but you add about £112 to have the RS 80's so I'm guessing they're more of a £200 wheelset.0 -
