Budget of £100 for pedals and shoes, any recommendations?
Not wanting to spend any more than that in case i don't like getting too muddy.

I use Shimano M520 pedals and DHB M1 shoes, you could probably buy them both for just under £70. I use them on my CX bike for offroad/commuting.
The DHB shoes don't have any fancy ratchet system or trick features but are well made, solid and (for me) comfortable. Wiggle now offer the Collect + service with their orders so it's not going to cost you anything to return if you don't like them or they don't fit.
Ideally try several shoes before you buy as fit and comfort IMO, is paramount but if you're on a budget then for £35, the DHB's are worth a punt.“Training is like fighting with a gorilla. You don’t stop when you’re tired. You stop when the gorilla is tired.”0
