Building a bike over the winter

I am buying a Dogma 65.1 frameset to build over the winter ( hit midlife an it was cheaper than buying a Porsche ) planning to fit Ultegra di2 but wanted some advice on wheels and bars. I live in the mountains so I guess aero wheels are not the best bet ? Also anyone with experience of the Most single piece Bar / stem. I am thinking that it may be better to get a two piece that offers more options to vary as I get used to the frame ?

A bit of a novice at building but wanted to really know the bike well when it's done so any advice ( other than get fit enough not to embarrass myself with more bike than legs... :oops: )
