Hi
I'm 5-10
32 inside leg
At the moment I ride a Trek 2.1 54 frame (plenty of seatpost out)
Would a Trek 58 frame be to much?

    Yes. Im 6ft 1 with an inside leg of 32 and the 58" frame is just right. Any bigger would be too much. So a 56 would be your best bet and as big as you would want to go.
