Triple sportive

I'm looking for a relaxed fit bike to ride longer distances. I live in the Brecon Beacons and am used to a MTB so dropping down the gears and spinning slowly up the hills.
With this in mind I think a triple would be a good idea especially with my rugby build.
My budget is around £1000. Could be a bit more for the right bike. I won't be buying until the new year but its fun looking at what I may get.
I'd welcome some advice on what options I have.

You could check out the Cube range where they often offer a triple chainset as standard or as an option you can select if you don't want a compact.

As an example the Cube Peloton Race has a triple crank as standard and Shimano 105 componentry. It's just a tad over your budget at £1079 but I'm sure you could haggle it down

You've given yourself plenty of time to consider the options available!
Triples can be good to get you started but also have a think about getting a compact chainset with a wide ranging cassette eg campag 12-29 or sram 12-29. That combination will get you up most hills, albeit not with the same amount of spinning you would get from a triple.
If you can do a bit of research and figure out the geometry to suit you and if you want to buy new, there are great deals to be had on line from Ribble, Planet X and Canyon. As you have a bit of time on your hands, I would also suggest you keep you eyes on the look out for a bargain here or on fleabay - you can get a much better specced bike this way than buying new, for the same ££ - provided you are careful and view before you hand over money.
