I have been thinking of getting the steerer cut down on my bike, but was wondering what difference it would make and what I would gain position wise.

Don't even consider it until you are totally satisfied that your position is correct. Once cut you can not go back. No problem having a few spacers above the stem until you are sure.

The only difference would be that you don't need as many/any spacers on top of your stem. This will not change your position at all, just the cosmetics.
