I've always wondered if you can buy replacement derailleur limit screws, b-tension screws, and other Shimano screws/bolts etc. A lot of various replacement items can be found for sale, but I've never seen smaller parts available.

Some bits yes, other bits no. B-tension screws tend to come as part of a kit rather than by themselves for example.0

That makes sense, mister p. Where would I find the bits that are possible to get?Ghost Race 5000 (2011) Shimano 105 Black

e.g. Dura-Ace 7900 rear mech0 -
Find the exploded diagram of the part by using google. So if you have an XT rear mech for example take the part number off it and add EV so RD-M772 EV. This will bring up the exploded diagram
Then take the part number you need, remove the Y- and the last 0 and put that into google. So for example the Inner Plate becomes 5W7 1000 (the space is important). This should give you hits of people selling that spare part like so - http://www.farnhamcycles.co.uk/Shop/c/207-rear-spares/
I know this sounds long winded but there isn't a blanket yes or no answer to your question unfortunately. I know as I worked with Shimano spare parts for a number of years.0 -
