Cassette size ?
Hi
My daughter is doing her first sportive in a few weeks at the grand old age of 12.
I think she is going to need a bit of a bail out gear for the hills, her bike is 8 speed with a 12-25 cassette,
what is the biggest I can change to ? will a 28 be too big ? I am thinking 27 is the most I can go to.
The rear mech is a suntace R80.

Depends on the derailleur. If it's a long cage mech you may be able to fit a bigger sprocket. Alternatively you could fit a MTB mech which will give the option of running a proper dinner plate gear.- - - - - - - - - -

Hard to tell if the mech is long cage, being a sun race its hard to find much info about it, but it does look longer than my sram and shimano 105, so that could be an answer,
