What does 'largest sprocket' mean

I'm looking a replacing my wheels and I note that in the technical documentation for some of it's wheels Shimano state largest sprocket. In the case of their 501s it says 'largest sprocket 21-30T'. What are they talking about ? I've never heard of a cassette that goes from 21-30 and surely a largest sprocket would be a single number which (in this case) would be 30T. Why should it matter anyway ?

    I reckon it implies that the largest sprocket on the cassette could be any size from 21 to 30 e.g. there is a DuraAce 11-21 10-speed cassette. Fitting a sprocket larger than 30 tooth to a road wheel is problematic - most road drivetrains cannot accommodate this size of sprocket.
    Make mine an Italian, with Campagnolo on the side..

    I was sort of getting at that. If 30 is the max then it should say 'largest sprocket 30T'. With RS10s its 21 - 27T. Why would a 501 be able to cope with a 30 tooth but a RS10 only 27 ? Why give a range for largest ?
