Fitting a new stem and bars

So before anyone goes and tells me to search the forum, I did try!
I know how to fit a stem and handlebar, its not rocket science,
but im having problems, I basicly want a 31.8 bar, currently using a 25.4
But im worried about getting the new stem and whether or not it will fit?
been looking at the nukeproof warhead, and some gravity maximus bars.
so basicly, um i have no idea if i get the stem, whether or not it will fit, it says something along the lines of 1.5" for the 25.4 stem then 1.6" for the 31.8, what would happen if i fitted the bigger one?

You want the stem for 1 1/8" steerer (I would presume you don't have a 1.5" steerer with 25.4mm bars!) and 31.8mm (otherwise called oversize or 'o/s').
