Im currently running Mavic Aksyiums, and am after some nicer lighter wheels, currently thinking of Hope Pro 3's on open pros, but wanted to know if anyone has any good suggestions for hubs (shimano fitment) or rims

How about the Tune Mig70/ Mag180 combo? They're a nice light weight but without any loss of practicality. I use them on my clincher wheelset - IRD Aero (30mm) rims and Sapim CX-Ray spokes - which comes in at 1390g.Racing Bike: Cervélo S2

I've had some Pro3s. Solid, rebuildable, not spectacularly light and noisy, although the newer ones may be better in this respect.
Also look at Dura Ace - maybe NOS or an Ebay find.
And outside options, a bit above budget would be Ambrosio and PMP. Tune will smash the budget.

I have Hope Pro 3s. For £200 I don't think they can be beaten. They're everything maddog2 says: solid, rebuildable, not super-light, noisy (if that bothers you!). Also made in the UK and the guys at hope are great and only a phone call away if you have issues. Regarding rim choice, the only thing with them is the drillings only go down to 28h, so this means a lighter low-profile rims (e.g. chose from Open Pro, DT RR415/465, Ambrosio Excellight) will be ideal, possibly a CXP33 or something like it if need a bit more stiffness. Consider thinner spokes too (e.g. Sapim Laser or DT Rev) as an easy/cheap way of dropping some more weight.
