mtb rear cassette with 105 chainset and shifters

I have built up a Sabbath silk route with a 105 triple chainset which is sweet for nearly all my cycling. However, i do tour full laden and want to build a 2nd set of touring of wheels with an11-34 cassette and mtb rear derailleur so as i can manage these scottish hills. Will the shimano dyna system gear be compatible ? Any recommendations gratefully received.

    A Shimano 10-speed MTB cassette will be fine, but the rear mech must not be dyna sys. Instead, get a regular 9-speed MTB mech.
