Installing new chain

I'm about to install a new chain. The first I've had to do. I've no problem breaking chain as I've done that before as I wanted KMC missing links on my existing chains.

I have 3 cassettes I use: 12-23, 12-25 & 12-27 (possibly going to get a 11-28 as well) so just wondering which cassette it is best to install the chain on. I use the 12-25 and 12-27 most often.

    I use 11-23, 12-25 & 12-27 cassettes.
When I changed my chain, I didn't even think about the different cassettes I use, I just measured it on the one fitted at the time (12-25)!
There's so little difference I can't say I've noticed any issues with any of the options...

Brilliant. The 12-25 is the one that is on at the minute so that's the one that I'l be using.

Install the chain on the 12-25 using the big cog-big cog method of measuring and add an extra link to cover for the 27... I use between a 23 and 27 and have had no worries...

I've already made the cut now but relieved now as I used that method (got it off bicycletutor) to size it. My chain had become worn, slippled and then jammed but I didn't come off amazingly (should have though) but I've only realised when I was changing the chain there now that the seize up must have broken the inner side plate off the rear mech so I'll have to replace that one before I can ride that bike again  I'm lucky I got away with it. Rest of the mech looks fine. Jockey wheels in one piece and doesn't seemed to have pulled the mech in any funny angles so lucky to get away with only a side plate (assuming I can find one that is or it'll be a new rear mech).

I've used the same KMC chain on a Shimano 12-25 cassette AND a Shimano 12-27 cassette without removing/adding any links and there were no issues whatsoever.
