Hard tail tyres

Hi, have been riding for many yrs on a Orange Patriot6+, fab bike, however have just bought 2011 crush, cannot fault it fast, nimble bla bla, however my dilema lies it the tyres, I know this old chestnut, but the stock tyres where fab until it got a little damp out there, to the the point that I scared the pooh out or myself, then banged on an old set of maxxis gazzis, now while they offer a lot more grip they really do sap the snappines out of the bike.
Im 15 odd stone, mainly ride local forests in south wales, rocks, roots, hardpack and plenty of mud etc, I do tend to ride quite hard, do I shut up and take the pain of tyres being slower and enjoy the extra grip. or do you kind people out there have any ideas as to what I could try, any advice would be helpfull.
