Winter bike what would you do

Just wanting to get peoples opinions on what to do. I had a Scott Speedster S10 Ally framed bike that took a knock and the frame buckled. It had Ultegra compact set on it. I made a claim on the insurance for the bike and got a Scott CR1 team with 105 triple. The insurance company didn't take the old bike so I am in the perfect place to get a winter bike sorted. I have decided to get the Kenisis race light T2 frame as the LBS will do the frame for £225 and the build for £35.
My problem is do i take the 105 off the new bike and put it on the winter bike and the ultegra on the CR1 or just put the ultegra on the winter bike and have done with it? If I change them all over I will be without a bike for a week or 2 and have to pay another £35 for a 2nd build so don't know if its worth it.

tbh I was thinking about it but just wouldn't know where to start at the moment and I would probably git to a certain point and need to take it in to the bike shop to correct my mistakes and get them to do most of it anyway0

I've just done the same thing more or less.
I moved all my Dura Ace of my Planet X Ti Sportive I use in the winter (as well as the rest of the year) and moved it to my Scott CR1 Team and the other way round.
I'm no mechanic but I managed to swap levers (reused the bar tape  ), cables (brake and gear), brake calipers, front & rear mechs over.
I didn't move chainsets as the two chainsets were comparable (FSA Gossamer Mega Exo & Shimano 105) and I didn't have the tool to remove it so it wasn't worth the effort.
It wasn't as hard as I thought and I'm glad I done it myself. My gears are shifting better than they ever have simply because I understand how it all works together now. Before I just played about with the barrel adjuster.0 -
It was a mix of Shimano Tech Docs and youtube videos that I used.0

Dead easy to do it yourself. Buy the Big Blue Park Tool book or the Haynes Manual for £15 and enjoy a an afternoon of fettling.Basso Astra

Do it yourself mate, give it a go. There's lots of info on the net now and books galore. You may have to buy a tool or two but it's worth it.0

Do it yourself...
But, in answer to your question, personally, I'd put the Ultegra on the Winter bike, as it's a little more robust. IMHO.Start with a budget, finish with a mortgage!0
