As is widely documented the pro's don't normally get to keep hold of bikes at the end of a season/contract. But what about the rest of the stuff they use, jersey's, lid's, spec's, shoe’s etc.etc?

Depends what kind of team you're talking about; Continental, Pro Conti or Pro Tour.

Anyway usually the clothing/shoes/helmet/etc is kept by the rider.

Depends how good a job they've done, how much the manager likes them, and if the manager had bugeted for disposing of said items themselves.

A well known UK based team had an ex rider spannering for a year in return for a bike they should not have sold on....

Suppose that the strip often changes in between years, although some years this will be very subtle. This would make the previous season's stuff obsolete although it would still fetch a price if sold.

I know a guy who has some of Cav's old gear from previous teams including a bike. He has been big mates with Cav for many years and uses the gear to train/ride in/on and it doesn't get any special treatment.

I would have some of the shirts on the wall but I guess when you've known a pro rider from the time when he was just one of the lads on a club ride or in a race it is different.
