New stem - what rise?

I have a 2010 Fisher HooKoo which has a flat bar and a 110mm stem (19" frame). While the 19 is definitely the right size I feel a bit stretched and would like to fit a shorter stem and riser bars.

I've settled on an Easton EA50 riser (probably 2" rise) and an 80mm EA50 stem but it comes in 6 degree and 20 degree angles and I can't decide (and don't really know the difference).

I am leaning towards the 20 as I assume it will bring the bars higher - is this correct?

Can anyone offer an opinion/advice?
