Looking at using one of these up front and a Small Block 8 on the back. Any thoughts on which would be the best with regards rolling/grip?

I would say the advantage is best suited to the back rather than the front. I put a 60a 2.25 on the rear but as much as I loved the extra speed, its a bit flimsy and after 5 flats in 5 rides I took it off and replaced with a nevegal 2.35 dtc which I've found much more assured if slightly slower.
