I have a deore rear mech (M531 I think!) on the build, but it seems to be missing a spring of kinds, i seem to remember my old bikes having one that kept the mech in the 'down' position without it being fixed rigid.

What is the item that fits in the place between hanger and mech, and where might i find one?

I believe its a spring but upon googling im inundated with hundreds of otions for "deore spring" so i appreciate an experienced insight!

Cheers

Thom

No spring between the hanger and mech, the chain tension holds it in place.

oh... So, whatre the grooves on the mating surface of the mech for? :/

I considered the spring holding it taught however im worried there should be something else there!

If you mean the little gaps to fit a spanner that are sitting pretty much flush against the frame hanger in the photo: they're for removing the spring should it break I think. Either way, nothing to worry about. Dave was right about the chain holding it in place.
